It’s that time of year again…..Got so many zucchinis that you don’t know what to do with them? Bake a zucchini cake!
Here is the recipe from my favourite cook…..my mom!
3 eggs
2 cups sugar
1 cup sunflower/vegetable/canola oil
3 cups flour
1/2 cup chopped walnuts or sunflower seeds
1/2 cup crushed pineapple
2 cups zucchini (shredded with peel on)
1/2 cup chocolate chips
3 tsp vanilla
sift together and add to mixture:
1 tsp salt
1 tsp baking soda
1 tsp baking powder
3 tsp cinnamon
Beat together eggs and sugar for 5 minutes. Add all other ingredients in order above. Make sure flour is well blended before all other ingredients are added. Grease and flour your pan, and bake for about an hour (checking after 50 minutes). Cool off and dust with icing sugar if desired.
350 degrees for 1 hour (check after 50 minutes)
